Chef de cuisine at Eventide, Jared Leaman-Farley, in Portland, Maine puts his own spin on the lobster that he receives fresh from Read Seafood. At this restaurant, Leaman-Farley says they sell 700 of the browned butter lobster rolls per day during the summer.
